Why get excited about cooking greens?
It’s tempting to think that Spring has arrived, right? It’s hard to believe we could still have a frost up through mid April or beyond! But let’s get out and enjoy it!
With blueberry planting behind us, we’re focusing on prepping beds for our transplants of collards, kale, swiss chard, spinach and lettuce. We’re giving our seedlings some time outside of the greenhouse to get them ready for transplanting.
I absolutely love greens, especially collards. There are so many ways to enjoy greens from a simple sauté with olive oil and spices, a smoothie or muffin ingredient, and my favorite, frittatas! We tend to use a recipe as a template and get creative.
If your garden is ready, now is the time to sow cooking greens, lettuce, and beets! You can still plant some sugar snap peas too!
Cora and I have been doing a run club at her elementary school. I met a mother there who said her doctor told her she needs more movement and healthy food.
